Jean-Baptiste Menigoz of Domaine Les Bottes Rouges began his working life in Arbois as a special needs teacher before becoming increasingly interested in natural wine through his good friend and esteemed Jura vigneron Raphael Monnier of Ratapoil. Jean-Baptiste now has 7 hectares of organic vines around Arbois and works with native yeast and no sulphur or other additions for all his wines.

Castor is Chardonnay from hand-harvested 20 year old vines grown in limestone and marl and age in neutral oak. A precise and high-toned wine with tangy citrus acidity, fine texture and hints of toast and baking spices.
