We've been lucky enough to work with George and Ellen of Mayland for a number of years now. Producing tiny quantities in the rolling Somerset countryside and distributing to just a handful of outlets, Mayland Vineyard really is a passion project. Fourth-generation fruit growers, they farm just 1.2 hectares of vines, using no herbicides or insecticides, with sheep grazing through the area over winter building up organic matter to improve soil health and biodiversity.

Two Ponds is a rather special traditional method sparkling wine, aged for over 3 years on the lees before disgorgement. Here, the still, pressed juice of the grapes is transferred to bottle before residual (or supplementary) yeast and sugar are added to create a secondary fermentation. The same process as created for Champagne, the result is lively aromas of toast, whipped butter, preserved citrus and spice flavours carried by vigorous and persistent bubbles.
