Chanterêves is a rising superstar of Burgundy. Founded in 2010 by Tomoko Kuriyama and Guillaume Bott who cut their teeth with Friedrich Altenberg and Simon Bize respectively, the husband and wife team started out as a négoce project, before acquiring 5 hectares of their own vines in 2020. These are ethereal, perfumed and racy wines, the result of low yielding whole bunches of organic grapes, delicate extractions, neutral oak and very limited sulphur.
This is Aligoté from a tiny .17 hectare parcel 'Les Chagniots' growing in rich alluvial soils. The grapes are crushed and pressed long and slow before fermentation with native yeasts and ageing for 12 months in 228l Burgundy barrels. Light reduction with creamy lemon tart up front with razor-sharp Aligoté acidity and saline apricot, pastry and exotic spices coming through on the palate.
