Peter Gierszewski of Domaine de Thalie has 4.5 hectares of vines around the village of Cluny in the Macon where he grows the usual Chardonnay, Pinot Noir, Aligoté, and less usual Syrah and Gamay. Peter works organically in the vineyard and vinifies naturally in the cellar with no additions save for a little sulphur at bottling when necessary.

Les Cosmics is Aligoté from grapes grown in limestone in Maranges area of Burgundy. Pleasingly waxy in texture with textbook lifted acidity and a combination of preserved lemon, apple skin and nut aromas.
