Les Horées Aligoté 'En Coulezain'
Catharina Sadde of Les Horées began her career as a chef in her native Germany, working in Michelin star kitchens, before re-training as a winemaker with some of the greatest estates in Burgundy: Domaine de la Romanée Conti, Domaine Comte Armand, Marquis d’Angerville, and Cécile Tremblay. She is an enthusiastic practitioner of biodynamics, and has a penchant for low-sulphur and whole bunch work in the cellar.
En Coulezain is Aligoté from grapes grown in Volnay. About a third is macerated for 5 days on skins before 8 months' ageing in old oak.
