Maison Skyaasen is a micro-negociant in Burgundy started by a Norwegian (Joakim) and San Franciscan (Olivia) who met at university in Vermont before moving to Burgundy in 2017. Made in miniscule quantities, these are refined, complex Burgundies that belie the young age of the estate.
The Pernand-Vergelesses is Chardonnay from two 50 year old ’villages’ vineyards in Pernand-Vergelesses, both situated at the very top of a slope near the forest line, meaning shallower soils, and more limestone influence. The juice is gravity fed straight into 228L barrels where fermentation kicks off naturally. The wine then stays unracked and on full lees for one year before bottling unfined and unfiltered with a small sulphur addition.
