Though originally from Burgundy, Marthe Henry Boillot spent most of her life working as a journalist in Paris before returning home in 2013. After studying winemaking at Le Viti in Beaune and gaining practical experience at Domaine Rougeot in Meursault, Marthe set up on her own in 2017, taking over the small cellar in Meursault of her esteemed winemaking grandfather Pierre Boillot.
The Hautes Côtes de Beaune is made from organic Pinot Noir grown in clay limestone soils in Sampiny-les-Maranges. Fermented in whole bunches before pressing off to age in old 228l Burgundy barrels for 18 months, this is a gorgeous, balanced Pinot, with a subtle, earthy nose and attractive dark cherry and delicate violet touches.
