Simon Bize is a fabled Burgundy domaine with roots going back to the 1880s in and around Savigny-Les-Beaune. The domaine is decidedly old-school with great care taken in the the vineyard to produce top quality, organic fruit from 22 hectares of vines. In the cellar, whole-bunch fermentation with indigenous yeasts favoured, and extended élevage in oak barrels before bottling.

Les Perrières is Pinot Noir from a 1.8 hectare vineyard planted in the 1970s on a hillside overlooking Savigny. Aged for 12 months in old oak barrels, before bottling without fining or filtration, this is soft and supple with lovely red fruit aromas of strawberries and red cherries, and savoury mushroom and undergrowth coming through on the palate.
