Eric Bordelet spent much of his professional life as a sommelier in Paris before returning to his family home in Normandy to take charge of the family orchard. He works along biodynamic principles, eschewing sulphur or other additions at any stage. His Poire Authentique is an energetic off-dry perry brimming with ripe pear, spice and just a touch of sweetness to round out the edges.
