Offbeat is the Wiltshire based winemaking project of Nicola and Daniel Ham which began in 2018. Nic & Dan work as naturally as possible with hybrid varieties suited to the English climate, ferments are wild and little if any sulphur is used. Production is small with only 2,000 bottles of each cuvee made.
Watchtower is a juice bomb produced from Pinot Noir biodynamically farmed by Lucie & Jules at Ham Street, Kent. Nic & Dan wanted to work the fruit lightly, aiming for a wine of real energy and lift. It had a gentle two-week whole bunch maceration in fibreglass before being pressed to two old burgundy barrels for 9 months and bottling early to retain freshness.
