Offbeat is the West Country based winemaking project of Daniel Ham which began in 2018. Daniel works as naturally as possible with hybrid varieties suited to the English climate, ferments are wild and little if any sulphur is used. Production is small with only 2,000 bottles of each cuvee made.
Wild Juice Chase is a red pét-nat from 39-year-old Triomphe and Bacchus vines grown on clay over chalk in the Test Valley, Hampshire. Still farmed today by Tim Ayers who planted the vines by hand in the early 1980s. Pure and mineral with bramble and hedgerow aromas and a bright, dry finish.
