Alice and Olivier De Moor are winemakers with a cult status in France, growing natural Chardonnay and Aligoté in Chablis that has attained something of a mythical status. Their vines have been worked organically since 2005 and no sulphur is used in either the vineyard of cellar.

Coteau de Rosette comes from a steep 1 hectare parcel planted in 1989 in the village of Courgis. Aged on lees in a combination barrel and foudre, it's fresh and tensile with a twist of bitter lemon on the finish.
