Olivier Lejeune is a winemaker who travelled the world learning his craft before settling himself at the heart of the Loire Valley’s Anjou, where was trained by renowned producer of Chenin Mark Angeli. He is a believer in regenerative farming, aiming to do the absolute minimum amount of ploughing (if any at all),and working with principles of agroforestry as well as introducing animals into the parcels and much more.
Poïèsis is a rare and highly sought after wine for good reason. The grapes were whole-bunch pressed and fermentation kicked off in tank initially, and finished in a combination of 225L and 450L barrels (old). The wine was left untouched in barrel for 8 months, and bottled with a small sulphite addition. There are flavours of orange cream, honey, baked pear and lemon tithe with an extremely long finish.
