Colle Formica is a tiny, three-hectare family project led by Sergio Bombetti and his son Paolo in Velletri, just south of Rome. The family has worked this land for over a century, but only recently started bottling their own wines. The grapes are grown organically in volcanic soils and the wines are spontaneously fermented and vinified naturally.
This is primarily Sangiovese, blended with a bit of white grapes Malvasia and Trebbiano. Like all Colle Formica wines, it’s wild-fermented and unfiltered with a slight farmy charm on the nose that cleans up into pure, vibrant fruit after a few minutes in the glass. Expect tart red cherries, wild strawberries, and a savory, balsamic edge.
