Ham Street Wines is the project of husband & wife team Lucie and Jules, who planted four hectares of vines just on the edge the Romney marsh in Kent four years ago. Starting the project as a way of re-connecting with nature whilst still working full-time jobs in accounting, Lucie and Jules were quickly bitten by the regenerative agriculture bug, understanding that improving soil health, promoting biodiversity and doing as little as possible to disturb the natural balance was the key to healthy fruit, and happy wines. Having been no-till since April 2020 they achieved organic certification in 2022 and biodynamic certification in 2024.
This is a serious and weighty Amber (or Orange) wine, made entirely from Chardonnay. The grapes were loaded into a stainless steel tank, whole cluster and topped up with CO2 to facilitate a carbonic maceration. Here they macerated for 23 days before being basket pressed into a terracotta amphora and aged for 10 months, after which the wine was aged in bottle for a year. The wine is a deep but bright amber colour, with a remarkable tension and grip. It has layers of bright citrus peel, bitter lemon, comte, hints of clove and star anise with an earthy and smokey note.
