Les Dolomies is the winemaking project of Céline and Steve Gormally. Having been trained at the Domaines Labet, Badoz, and St-Pierre, they bring a wealth of experience to their tiny plots in Passenans, Jura, from which they make otherworldly Jura wines full of both elegance and power. Wild yeast fermentation and bottling without fining or filtration have always been the norm here. From 2020 no sulphur is used during vinification and ageing, and the wines have gained in clarity and depth.
Chardonnay from the lieu-dit of La Chaux, a plot of 35 year old vines planted on a steep south-west facing hillside in Nevy-sur-Seille, a village entitled to the Château-Chalon AC for many of its vineyards. Aged for ten months, the in marl and rocky limestone terroir cuts through the incredibly pure zesty fruit, with roasted almond notes, and the low yields give the wine resonance and intensity.
