This Chardonnay comes from old vines grown on the marl and limestone slopes of Pupillin, farmed organically and biodynamically since the 1980s. Fermentation takes place spontaneously with native yeasts, and the wine is aged slowly in old oak barrels under a veil of yeast (sous voile), developing extraordinary depth and complexity.

The result is a wine of astonishing precision and tension: aromas of toasted nuts, preserved lemon, alpine herbs, and subtle oxidative notes that recall fine sherry, all carried by a mineral, saline backbone. Profound, contemplative and endlessly long - this is Jura Chardonnay in its most iconic form.
