Maison Skyaasen is a micro-negociant in Burgundy started by a Norwegian (Joakim) and San Franciscan (Olivia) who met at university in Vermont before moving to Burgundy in 2017. Made in miniscule quantities, these are refined, complex Burgundies that belie the young age of the estate.
This is Pinot Noir from low yielding, 50 year old vines in ‘Les Sous Courts’ vineyard in Monthelie, a small parcel on the Auxey-Duresses side of this appellation with very little topsoil, and limestone-rich soil. Similar to the Savigny-les-Beaune, this is whole bunch fermented for 2 weeks before pressing off into old barrels to age for a year on lees. Unfined, unfiltered and without added sulphur.
