Sophie Evans studied winemaking at Plumpton College alongside Lucy Chilvers before travelling to work alongside Michael & Melanie Voelker at 2Naturkinder in the Franconia region of Germany. After producing her first two wines in Germany, Sophie purchased a hectare of her own vines growing wild down a country lane in Kent in the summer of 2022. Farming attentively with teas, ferments, and essential oils for disease control alongside biodynamic treatments she works with Pinot Gris & Pinot Noir, alongside a small planting of hybrid varieties, to produce incredibly pure and delicate wines.
Sophie's Rotling is an aromatic, textural delight made from a field blend of Müller Thurgau and Domina with a short, 2 day maceration. Bags of fruit with lively acidity, and plenty of texture.
