Tillingham is a pioneering English natural wine estate crafting progressive, boundary pushing wines on a 70 acre farm near Rye in East Sussex. Taking the helm in 2023, winemaker Salvatore Leone is dedicated to continuing this ethos of experimentation and ensuring that Tillingham’s wines remain distinct and true to their terroir.
Col is Tillingham's ancestral method sparkling wine AKA Col Fondo, made from a blend of Bacchus, Ortega, & Muller Thurgau. Grapes were direct pressed and fermented in stainless steel before blending and bottling with a small sugar addition (10g/l) and left to re-ferment in bottle without disgorgement. Salty lemon, elderflower and green apple aromas lead on to a zippy palate with slightly creaminess to give the wine additional complexity and texture.
