Laurent Saillard is one of our favourite Loire winemakers. He moved to New York when he was younger, helping to open Balthazar and then starting one of the first natural wine bars in New York. He now has a vineyard in the Loire where he crafts natural wines with zero additions that have an immediate appeal but plenty of depth and complexity.

You & Me is 100% organic Chenin Blanc purchased from Laurent’s friend Julien Moreau at Domaine De Cambalu. Direct pressed, then aged one year in amphora and bottled with minimal sulphur. It's rounded, textured and mineral with plenty of ripe fruit.
