Ad Vinum is the winemaking project of Sebastien Chatillon, a former head sommelier at Le Chateaubriand in Paris who moved to the Gard to pursue his dream of making his own wine. As befits his previous job, Seb excels in trusting his senses to blend small parcels of grapes, often in unusual combinations, to create perfumed and memorable wines, eschewing sulphur or other additions at any stage.
A blend of juice from all of the grapes from his vineyards, fermented together and aged for nine months in an old barrel previously used to age his friend Frederic Cossard’s Puligny-Montrachet. The result is a deep, one-of-a-kind rosé that pairs sun-kissed Southern fruit with curious mineral and structural notes from the barrel. An ethereal wine with kaleidoscopic complexity.
