Ad Vinum Yeah
Grapes: Syrah, Sauvignon Blanc
Ad Vinum is the winemaking project of Sebastien Chatillon, a former head sommelier at Le Chateaubriand in Paris who moved to the Gard to pursue his dream of making his own wine. As befits his previous job, Seb excels in trusting his senses to blend small parcels of grapes, often in unusual combinations, to create perfumed and memorable wines, eschewing sulphur or other additions at any stage.
Yeah is a blend of Sauvignon Blanc and Syrah from thirty-five year old vines planted over sand and clay in Vallabrix. Half the Sauvignon is given a direct press, while the remainder macerates in the juice for five days. Just before pressing, a direct press of Syrah is added. The result is a textural, perfumed rose with balsamic strawberry, wild herb and spice aromas with a stoney minerality.
