Ajola Once Upon a Time
A blend of Trebbiano Toscano, Verdelo, Drupeggio and Chardonnay from forty five year old vines planted over sandy loam in Orvieto. The grapes were fermented on skins for ten days, before eighteen months of élevage in old barrels. At five years of age, this has aged beautifully and is incredibly complex. With delicate, balanced flavours of ripe mandarin, coconut flesh and wet stones.
