Renaud Bruyère and Adeline Houillon have a tiny domaine of just 4.5 hectares in the village of Pupillin, gaining a reputation for some pure and memorable expressions of Chardonnay, Savagnin and Poulsard which they make along biodynamic principles.
From the 2016 vintage, this is 100% Savagnin grown in clay limestone soils in Le Viaduc, a terroir in Montigny-lès-Arsures. Bottled in late 2019 after 3 years in barrel, this has immense power and tension with some oxidative notes despite being made in the ouillé or topped up style. About as good as it gets in Jura!
