Fabien Cazé's family has been active as a grape grower in the heart of the Marne valley for ten generations. In 1953, Roger Cazé started the commercial production of champagne. Fabien has now been in charge of the youngest generation since 2013 and the focus of the Cazé-Thibaut domain is on attention to terroir and the well-being of the vineyards. Pesticides are not used in the fields around Châtillon-sur-Marne in Vallée de la Marne. In the cellar, the grapes ferment in old wood, the champagnes are given time to mature and the dosage is kept low. With Meunier as the main grape, Cazé-Thibaut makes lively, precise and fresh champagnes.
Naturellement is 100% Pinot Meunier from Châtillon-sur-Marne. It's vinified 50% in fût de chêne and 50% in steel tanks. It has a sweet candied nose with a nice layer of rich tea biscuit. On the palate it's fresh with citrus, apple, some tropical fruits and a vertical, almost chewy bitter note running through it.
