Grapes: Pinot Meunier
Thomas Perseval has just 2.5 hectares of vines which have been passed down through his family for generations. The domaine has been certified organic since 2012, and Thomas is focused on making single vineyard wines, all of which are aged in barrels (228l and 500l) for at least 9 months, with very minimal or no sulphur added.
La Pucelle is Pinot Meunier fermented with indigenous yeasts and aged on the lees for almost 4 years before disgorgement. Beguiling apple and red fruit aromas with hints of forest floor, toast and spice on the intense, taut palate.
