Emmanuel and Bénédicte Leroy of Ruppert-Leroy have 4 hectares of vines in Essoyes. The domaine is an exemplary biodynamic farm where humans, livestock, fauna and flora live in harmony. The Ruppert-Leroy Champagnes reflect specific terroirs and are made from low yields of meticulously sorted grapes. They are vinified with natural yeasts, without fining or filtration, aged in older oak and disgorged with no dosage. No sulphur is added at any stage.
