Julien Pineau has a very straightforward, laissez-faire approach to winemaking but he very much knows what he is doing. We're particularly enamoured with his pet-nat made from a direct press of Cabernet Sauvignon, blended with a little Gamay which has been macerated for a couple of days. Left on the lees to give it a creamy, toasty quality along with aromas of blueberry, raspberry and violets.
