Alice and Olivier De Moor are winemakers with a cult status in France, growing natural Chardonnay and Aligoté in Chablis that has attained something of a mythical status. Their vines have been worked organically since 2005 and no sulphur is used in either the vineyard of cellar.

'L'Humeur du Temps' roughly translates to 'the mood of the times' and this is what the De Moors attempt to do with this cuvée, blending several of their domaine parcels to create a wonderful snapshot of the vintage. Intensely mineral and saline with a plethora of fruit, spice and chalky aromas.
