Didier makes no bones about his love of natural farming – vineyard work is organic and he adopts a less is more approach in the cellar: no introduced yeasts, chaptalizing, acidifying, filtering or fining. He makes oxidative styles, but his interest lies in making wines ‘topped up’ to preserve the varietal character of each wine.
Oisseaux de Passage is Savagnin and Chardonnay aged for 3 years in old oak. An unmistakable Jura nose of tart citrus, apple and quince with plenty of savoury spice and warm yeasty notes. Rich and broad on the palate with more citrus and a buttery, pastry like finish.
