Frederic Cossard of Domaine de Chassorney is a legend of natural winemaking in Burgundy, producing cult wines of renowned energy and finesse in a region not short of incredible wines and winemakers. After starting from scratch, he now has 10 hectares of vines across the region, all farmed organically and vinified without any additions.
This is a sublime Auxey-Duresses from sixty year old vines farmed by the Cossards for the past two decades in the lieu-dit ‘Les Crais’. Grapes were fermented as whole bunches for just a week, making for a lithe, pale wine marrying delicate, complex flavours of red berries and chalky minerals.
