Mathieu Goury of Domaine de Chevillard is based in St Pierre d’Albigny in Savoie where he has 12 hectares of mainly south-east facing high altitude vines. He has an old school approach, with wines being racked only once before bottling and a minimum amount of Sulphur is added at that time.

This is his Jacquère that is pressed directly into old oak where it undergoes a long, slow fermentation. A riper style than some, with aromas of apricot, almond, white pepper and smoke.
