Etienne Thiebaud set up Domaine des Cavarodes in 2007 after working for several years with Pascal and Evelyne Clairet of Domaine de la Tournelle. He settled just north of Arbois in Cramans, by the Loue River, which marks the boundary between the Jura and the Doubs départments. Here he was fortunate to acquire a few very old parcels of vines between 60 and 120 years of age totalling five hectares, mainly in Kimmeridgean chalk and clay with some limestone and marl. Winemaking is organic with some biodynamic preparations.
Méandres is Chardonnay from Etienne's Lumachelles vineyard that due a very slow fermentation in 2018, was kept in foudre for several years before its recent release. Though ostensibly made in the ouillé or topped up style, this is lightly oxidative in style with plenty of saline and savoury notes accompanying the green apple and citrus fruit.
