Domaine Overnoy Cotes Du Jura Trousseau
The first vines of Domaine Overnoy were planted in 1982 and the estate - organic since 2014 - is now run by Guillaume Overnoy, nephew of the legendary Pierre Overnoy. The vineyards are planted with the five main Jura grapes which are vinified in a stunning ancient underground cellar. Guillaume's inspiration naturally comes from his uncle who he consults with on a regular basis.
This is Guillaume's Trousseau, macerated on skins for three weeks before pressing off to ferment underground in old barriques. Lifted and nuanced with delicately spiced fruit and savoury undertones, this is a beguiling Trousseau that changes several times over in the glass.
