Seiichi Saito of Domaine Petit-Roy is based in Chorey-les-Beaune where he has crafted precise and exhilarating wines since 2017. After attending the prestigious Beaune wine school in 2006, Seiichi went on to apprentice for over a decade at some of the finest domaines in Burgundy including Mugnier, Leflaive, Rousseau and Bize. Applying everything he has learned during this time to the 2 hectares of vines that comprise Domaine Petit-Roy, Seiichi farms biodynamically, and in the cellar favours whole cluster fermentations, gentle extraction, no new oak or filtration, and sulphur only at bottling where absolutely necessary.
This is Seiichi's Savigny-lès-Beaune made from a plot of Pinot Noir vines planted in deep clay soils in the mid-1990s. Fermented with indigenous yeasts and aged for 16 months in old oak before bottling without fining or filtration, it's elegant yet deeply fruited with black cherry and blackcurrant aromas laden with wild herb and exotic spice notes.
