Domaine Vincent Dauvissat Chablis 1er Cru Séchet
Domaine Vincent Dauvissat is arguably the finest domaine in Chablis and its prestige matched only by Domaine Raveneau. All farming is biodynamic and done by hand, with yields kept low. Vinification is slow and meticulous, and always involves time in old oak (he believes Chablis needs oak, as without it the wine is too austere and oak is needed to soften its hardness). All this allows them to produce ageworthy wines with a purity and intensity of flavour seldom encountered in Chablis today.
The grapes are fermented slowly then remain in tank for a year before being transferred to oak barrels, a small percentage of which are new. The wine has a great balance of power and finesse, with the trademark acidity, granitic minerality and full body. Perhaps his most austere expression of Chablis, it's saline and savoury with notes of lemon, fresh ginger and dried flowers with an umami finish.
