Fabrice Dodane of Domaine de Saint Pierre has about 6 hectares of vines growing in the limestone and marl soils of Arbois and the Côtes du Jura appellations. Certified organic since 2012, he ferments with native yeasts and does not fine or filter any of the wines.

Le Dos d'Chat is Fabrice's négoce range, all made in the same manner as his domaine bottles. This is Riesling macerated on skins for one week before pressing off to age in old oak. Aromatic citrus blossom on the nose with plenty of texture and savoury depth on the broad, spicy palate.
