Apples: Unknown local varieties
After moving from his hometown of Madrid to the Sierra Nevada National Park in 1997, Manuel Moreno discovered an orchard of indigenous apple varieties 70-100 years old 2000 metres above sea level, well suited to the cold harsh temperatures of Spain’s highest peak. His aim is to make 'cava with apples' which he does naturally without fining, filtration or other additions.
This is a cider made in the pet-nat style from 7 local apple varieties with a gentle bubble and aromas of salty brine, fresh lemon and bruised apple.
