Apples: 7 Indigenous Varieties
After moving from his hometown of Madrid to the Sierra Nevada National Park in 1997, Manuel Moreno discovered an orchard of indigenous apple varieties 70-100 years old 2000 metres above sea level, well suited to the cold harsh temperatures of Spain’s highest peak. His aim is to make 'cava with apples' which he does naturally without fining, filtration or other additions.
This is his elegant, effervescent Metodo Clásico which he makes by adding sweeter apples from his second harvest to the still cider he has made from the first harvest. Very fresh with a steely quality and generous fruit and spice aromas leading to a bone dry, lightly toasted finish.
