Domaine Ganevat Vin Jaune
Jean-Francois Ganevat is an iconic winemaker, heralded not just as one of the best vignerons in Jura but in the natural wine world full stop. His family have deep roots in Jura and Jean-Francois began by working alongside his father in the 1970s. Formal training at wine school followed and thereafter a stint in Burgundy with Domaine Marc Morey, before Jean-Francois returned to take over the family business in 1998 where his legendary reputation has grown stronger with each passing year.
The jewel in the crown of any Jura producer, I frankly can’t believe we’ve managed to get a couple of bottles of Ganevat’s Vin Jaune! From a small vineyard of the native Savagnin variety planted on a terroir mainly composed of blue marl.
Winemaking begins with spontaneous fermentation with native yeasts. The wine then undergoes biological ageing under aveil of ‘flor’ for a whopping 12 years. Finally, it’s bottled without being filtered, clarified or adding sulphites. An explosion of gingerbread, baked apple, tangy honeyed flavours and a creamy mouthfeel. This will age for many, many decades to come.
