Cedric Garreau of Garo'vin farms 3 hectares of vines around Beaulieu-sur-Layon in Anjou using biodynamic methods, the only sulphur used is to clean the barrels.
Metisse is a blend of Cabernet Franc and Cabernet Sauvignon. The Franc comes from Cedric's largest parcel of vines planted in 1940 on soils rich in clay and shale. The Cabernet Sauvignon is from a small parcel planted in 1983 on clay and loam. He de-stems all the fruit and gives it a three week maceration before eleven months in old barrels. Wonderfully lush fruit with very soft, silky tannins.
