Kevin Bouillet took over his family’s domaine in 2018 and in a very short time has taken it to great heights, currently making some of the most electric wines in Arbois, working with some seriously prized parcels, including high-altitude sites and the iconic grey marl that makes Jura wines sing.

100% Savagnin harvested from limestone and marl soils in Pupillin and aged for 24 months in neutral oak. This long, slow sleep rounds out the sharp edges without masking the fruit in wood to create a wine that is crystalline and bright with aromas and flavours of preserved lemon, green apple, and wet stones.
