Laurent Saillard is one of our favourite Loire winemakers. He moved to New York when he was younger, helping to open Balthazar and then starting one of the first natural wine bars in New York. He now has a vineyard in the Loire where he crafts natural wines with zero additions that have an immediate appeal but plenty of depth and complexity.
A beautiful new wine from Laurent, produced from grapes purchased from his friends Domaine De Cambalu. 100% Pineau d'Aunis, but two variants, one of which is a 'teinturier' variety with red juice (which we didn't know existed). It was given 6 days maceration before elevage in tank. Beautiful bright fruit, framed by that signature white pepper that this grape is known for. So delicious!
