After studying winemaking in Chablis and Beaune, Xavier Weisskopf founded Les Rocher des Violettes with the purchase of several small parcels of old vines in Montlouis. His ancient Chenin Blanc and Cabernet Franc vines were mostly planted pre-WWII, with some reaching 120 years old. Farmed organically, hand-harvested and vinified with a light touch, The resulting wines are beautifully textured with bags of personality and laser precision.

Touche-Mitaine is Chenin Blanc from a 4-hectare parcel located on the slopes of Saint Martin le Beau. The terroir is 1.5m of clay/silex stones before hitting pure chalk. Three-quarters vinified in old oak and the rest in stainless steel, this is taut and steely Montlouis Chenin with green apple, honey and preserved citrus aromas.
