Claude Courtois of Les Cailloux du Paradis has 13 hectares of previously abandoned vines in Soings-en-Sologne, near Cheverny which he tends biodynamically, cultivating cult sulphur-free wines from varieties including Romorantin, Pineau d'Aunis, Côt, Pinot Noir and many others. The wines are fermented spontaneously - long  and slow - and bottled without racking, fining or filtration.

This is Claude's lithe and ethereal Pinot Noir with intense undergrowth and barnyard aromas giving way to effortlessly pure red berry aromas of cranberry, wild strawberry and pomegranate.
