Claude Courtois of Les Cailloux du Paradis has 13 hectares of previously abandoned vines in Soings-en-Sologne near Cheverny which he tends biodynamically, cultivating cult sulphur-free wines from varieties including Romorantin, Pineau d'Aunis, Côt, Pinot Noir and many others. The wines are fermented spontaneously - long  and slow - and bottled without racking, fining or filtration.

Quartz is Sauvignon Blanc from old vines that penetrate deep into quartz sand soils. Vinified and aged in old barrels for 12 months, this is a deep, saline and mineral expression of Loire Sauvignon with touches of white flowers, stone fruit and spice.
