Claude Courtois of Les Cailloux du Paradis has 13 hectares of previously abandoned vines in Soings-en-Sologne, near Cheverny which he tends biodynamically, cultivating cult sulphur-free wines from varieties including Romorantin, Pineau d'Aunis, Côt, Pinot Noir and many others. The wines are fermented spontaneously - long and slow - and bottled without racking, fining or filtration.
The Racines Rouge is a blend of many varieties grown in flinty clay soil by Claude including Cabernet Franc, Cabernet Sauvignon and Côt. Hand harvested and aged in wood for around 30 months, it's tremendously complex with savoury smoke, tobacco and leather aromas complemented by bright plum and raspberry fruit and signature tension from finely tuned acidity.
