Claude Courtois of Les Cailloux du Paradis has 13 hectares of previously abandoned vines in Soings-en-Sologne, near Cheverny which he tends biodynamically, cultivating cult sulphur-free wines from varieties including Romorantin, Pineau d'Aunis, Côt, Pinot Noir and many others. The wines are fermented spontaneously - long and slow - and bottled without racking, fining or filtration.
This is one of Claude's most famous cuvées, and one of the supreme examples of the Loire speciality Romorantin. Aged for 18 months in a mixture of oak barrels and concrete, it has savoury and floral aromas redolent of Mediterranean herbs, chamomile, hay and spices cut through with a ripping acidity.
