Maison Valette is based in Chaintré in the south of Burgundy between Mâcon and Beaujolais. In total there is 8 hectares under vine all worked organically since the early 1990s. Harvesting is done by hand and the wines undergo long barrel ageing in old oak before bottling without fining filtration or sulphur.
The Macon-Chaintré which is from vines with an average age of 65 years, planted on silty-clay soils and undergoes 26-months' elevage on fine lees, 80% in wood and 20% in tank. An intense, golden wine with opulent aromas of ripe apple, hazelnut and minerals with a saline edge and fine acidity.
